Irish Soda Bread
A couple of years ago I was searching for a new recipe to make for St. Patrick’s day and I came across Irish Soda Bread. IT IS AWESOME! Now I make it every year for St. Patrick’s Day and a few other times during the year as well. It’s super easy and delicious. It’s a quick bread so there isn’t a rising time involved which is great when you’re in a hurry. There are lots of different recipes out there and some claim to be more authentic than others but this is our families personal favorite.
Irish Soda Bread Recipe
Servings: about 12
Ingredients
3 cups of flour
1 TBS of baking powder
1/3 cup of sugar
1 tsp of salt
1 tsp of baking soda
1 egg
2 cups of buttermilk*
1/4 cup of butter melted
Directions
Preheat oven to 325 degrees. Combine flour, baking powder, sugar, salt and baking soda in a large bowl. Mix the egg and buttermilk together and all it to the flour mixture. Mix just until it’s combined. Stir in the melted butter. Once you mix all of your ingredients it’s more like a wet biscuit batter. Pour into a prepared pan. I like to bake mine in my casserole dish. Bake for 60-70 minutes or until a toothpick inserted into the middle comes out clean.
*If you don’t have buttermilk you can make a good substitution for it by adding 1 TBS of vinegar to every 1 cup of milk in your recipe and letting it set for about 5 min before using.
